Kunafa, served warm

Kunafa — knafeh, if that is the spelling you grew up with — is shredded kataifi pastry layered over soft cheese, baked until the top goes deep gold, then finished with sugar syrup. Cut it warm and the middle pulls.

It is the item that turns a drinks booth into a dessert station, and the reason a lot of guests come back to the counter a second time. Paired with a small cup of karak or sulaimani it is a complete after-dinner course that needs no plates, no cutlery and no seating plan.

Our chips and cheese paratha is the other half of the food menu: flaky paratha wrapped around melting cheese and Chips Oman, with hot sauce. Anyone who spent time in the UAE stops mid-sentence when they see the bag. Everyone else takes a picture and then asks for one.

How it works

A booth, a counter, and a queue that keeps forming

We bring a branded canopy, a served counter, and pots of tea and coffee brewed the way they are brewed in the Gulf. Because everything is brewed in volume before the doors open, we hand out a hot cup every few seconds rather than every few minutes.

That matters most at the moments events actually get busy: the end of a ceremony, a conference break, the hour after sunset at a Ramadan bazaar. The booth is designed to absorb a crowd, and the setup is designed to be photographed while it does.
